Bored with Butties phase 26a

Talk about non-Bongo stuff. BUT KEEP IT CLEAN....there are children watching. Smut, filth, and anything offensive will not be tolerated and removed immediately.

Bored with Butties phase 26a

Post by Muzorewa » Sun Jun 27, 2010 8:50 am

Ok, here’s a second attempt at this but using lamb instead of sparrows. See what you think of this.

Image
Lamb, apricots, tomatoes, chickpeas, onion and various herbs & spices

Image
Note the apricots this time are well within the sell-by date and still orange

Image
Much less charcoal this time, a lot less fierce but still plenty hot

Image
About 600g diced lamb....

Image
....an onion, couple of garlic cloves, a teaspoon each of ground ginger, cumin, cinnamon, turmeric and chilli flakes, plus a handful of chopped parsley & coriander....

Image
....mix it up while it’s on the heat....

Image
....add a tin of chickpeas, tin of chopped tomatoes, and 250g dried apricots....

Image
....mix it all in....

Image
....and put the lid on. Keep about half a litre of stock available to add from time to time as it dries out....

Image
....replenish the charcoal as necessary....

Image
....2 hours later....

Image
....add some flaked almonds and sesame seeds....

Image
....and serve with cous cous, parsley & coriander. :D

Image
Result – absolutely delicious. Conwy beware next weekend

Could be another one tonight as Jr was out last night, or just a barbie or a big paella. Then again, maybe all three

Wonderful Muz. I am with Ady though, not sure about the cous cous. The lamb looks wonderful though. Might practice in the yard to see if I can cook that outside. Thanks Muz

For all you cous-cous haters out there, just use rice. Or pittas or other unspecified flat bread. The mix of spices make it a wonderful taste and because it's cooked for so long the meat is amazingly tender when you consider it has walked all the way from NZ

Ok, next proper Bongo-camp and we'll do it :D

Bara craf would work (Google Translate to the rescue every time) but what's wrong with cous-cous? :?
