Seeing a beautiful mackerel sky this last week whilst on holiday in Wales....

....gave me an idea - Stuffed mackerel, prawns & samphire. This could just work :lol:

Marsh samphire is freely available in coastal areas if you know what you’re looking for, alternatively Waitrose sell samphire :wink:

Mackerel, prawns, samphire, eggs, onion & lemon. And a few other things :wink:

Fry the onion....

....and add a chopped hard-boiled egg. Tip – boil the eggs beforehand :wink:

....and add some Parmesan cheese. Hey! – I like Parmesan :evil:

....add some breadcrumbs, from bread, dummy, not Paxo, and you should have something like this.

Now, if the dozy cow in Waitrose had taken ‘clean them’ to mean remove the guts & entrails, all would be fine now. But as she decided to decapitate them, stuffing them was now out of the question as the bottom bits were kind of floppy. So the ‘stuffing’ will have to be served alongside, not stuffed. :evil:

Flour the mackerel....

....and bung them in the same frying pan. Chip off the crusty bits from the bottom if you’re fussy :roll:

....then add the prawns....

....and turn the mackerel once while you keep the prawns moving....

....add the samphire and fry in those delicious juices....

Hmmmm, off to Scarborough in the morning to see SD & his magnificent boat.

Caught quite a few mackerel & some cod, on a couple of voyages in Whitby last weekend, may well be able to replicate this menu tommorow night.
