Bored with Butties phase 37
Migas, a kind of Tex-Mex version of scrambled eggs but it’s quick & easy to do, so ideal as a Bongo-lunch Or breakfast / brunch in competition with DBO
There is also a Spanish & Portuguese version of this but that is quite a different thing altogether.
Corn tortillas, eggs, garlic, chillis, onion, chorizo, tomatoes, spring onion & avocado....
....rip up some corn tortillas and fry until crisp....
....or use not-too-salty Doritos (Other brands of tortilla chips are available)
Chop the onion, garlic, chorizo & chillis....
....add them and cook until the onion has softened.
Add some cumin for that classic Mexican taste, and some chopped tomatoes....
Add a few eggs. Cook, stirring, until the eggs are set – that’s your choice how congealed you like them.
Serve surrounded with spring onion & fresh coriander. And sliced avocado. Sprinkle with mild chilli powder if you fancy it, or hot if you dare
You know, for a one-pot quickie this really takes some beating

OH, YESProper meaty scran with chillies and garlic...sorry, but I am unfortunately allergic to fish...Meaty and sausagey is fine by me!.....A big YUM...
