Bored with Butties "nearly live" phase 40b
It’s getting to that time of year to break the slow-cooker out. For a campsite meal this is ace, you could still do it at work if you run an extension lead out to your Bongo and start it off at 6am. And take a late lunch
For this I used diced beef, none of that poncy minced beef, you might as well crack a tin of Stagg chili open if you’re going to do that.
1kg diced beef, 2 jars Asda hot chili con carne sauce, 2 packets Uncle Ben’s Express Mexican rice
Tip a jar of sauce into the slow-cooker. At this stage it looks like the contents of a PortaPotti
Add the beef....
....and another jar of sauce....
....agitate it with your finger or anything else convenient....
....and switch on – on low heat.
Seven hours later....
....add the rice....
....use a spoon to agitate it now, it’s too hot to use your finger
Another half hour later, chop some coriander and add that to the mix.
Voila - Minimalist effort Chili con carne. Preparation time: 2 minutes. Cooking time: 8 hours.
It was well-received by all at Ashbourne who dared try it. I had the leftovers cold for breakfast

Not mentioning any names but the toilets at one campsite took more of a battering than an awning at Buxton after a recent meet . . . . .

Ah, squat toilets - perfect for getting you prepared for those Scottish wild-camping expeditions
And just in case you're wondering about the sudden glut of chilli recipes, well it's in the news at the moment and you know how I like to keep these meals topical. But I do think the Civil Rights brigade should do something about the exploitation of children in Chile, having 33 Chilean minors trapped underground isn't good publicity, is it
