


500g diced lamb....

....120g chana dal....

....black & green cardamoms....

....cinnamon sticks, chilli powder, turmeric & ground ginger....

....root ginger & garlic paste....

....add two litres of water and bring to the boil....

....when all the water has evaporated (about two hours) discard the whole spices....

....and you should have something like this


Get some black cumin seeds and chop the chillies & coriander....

....add to the meat...

....and mix – you should have something like this



Pass the mixture through a mincing machine – What do you mean, you don’t have a mincer in your Bongo?


....twice....

....form into patties....

....beat a couple of eggs....

....coat the patties and fry in a little oil....

....each side....

....and serve with fresh salad.
