Due to only having limited time for my lunch, despite what you lot think, I cheated slightly and cooked the spuds the night before. But if you have time, there's nothing stopping you doing the spuds then setting them to one side while you zap the rest of the ingredients in the same pan.


Peas, onion, garlic, parsley, cherry tomatoes & chorizo....

....bung them all in a frying pan with a little olive oil....

....add to the eggs & spuds and cook both sides....
