Tough Northerners - Beef Chilli and Apple/Rhubarb Crumble

Post by Driver+Passengers » Fri Aug 01, 2014 5:31 pm

forum/viewtopic.php?f=37&t=65565&start=30#p633413

Rain or shine, I am offering to cook up some delicious food in a couple of dutch ovens, over charcoal, to share with whoever wants some. All from scratch - no "freeze at home and thaw on-site" nonsense... :p

To keep things simple, I am no longer proposing the "chicken and split pea stew" (although I will be making a pot of that for ourselves at some point, anyway!), so it's Beef Chilli for main (please make your own rice/pasta/tatties) and Apple/Rhubarb Crumble for pudding. I'll propose, as a first suggestion, Saturday night, 7:30pm.

Could I get a show of hands to guage interest/quantities and whether you'd be willing to bring along a bag of a few ingredients to contribute? If I assume a good number of takers, and/or just go with as much as I think will fit in the pots, then the shopping list might be something like:

[*] charcoal (Driver+Passengers)

[*] 2 or 3 small bags of Lidl "just add water" bread mix

[*] 3kg beef mince (Driver+Passengers)
[*] 4 cans chopped tomatoes
[*] bottle of red wine (Muz)
[*] 3 cans beans (kidney or mixed), 1 large can sweetcorn
[*] 1kg+ onions, 1kg carrots
[*] head of celery, garlic, fresh chillis

[*] 8 cooking apples
[*] 4 large bunches rhubarb
[*] flour, oats/museli, sugar, butter
[*] 3 or 4 large cartons custard

If you want to copy/paste that shopping list in a post below, and put your name on one of the rows, then that would be great. I'm not going to be precious about who brings what, eats or doesn't. As long as there's enough to go round the folk that do chip in.

What a great advert for the Bongo community.

Even though we won't be there, we'll be there in spirit. So we'll contribute the bottle of red wine and I'll pass that to Ady

We've got a big plastic sheet in the van so I'm sure we can fix something up between awnings as well, Anyway it never rains in the Lake District

I can never think of the Dales as a part of the Lake District, having walked the Dales Way years ago I tend to think of it as a part of Yorkshire as the landscape is totally different.

Now down to serious business. I can bring more charcoal, and perhaps some butter and sugar but how much of each are we looking for matt?

Me and Trish are in but on the other thread - doh! What can we bring as it all seems to be covered except for the rhubarb and I've no idea where to get that

Seriously, what should we bring?

Fantastic, everyone! Thanks!! :D =D>

[*] charcoal (Driver+Passengers/Tony)

[*] 2 or 3 small bags of Lidl "just add water" bread mix (Ian & Marianne)

[*] 3kg beef mince (Driver+Passengers)
[*] 4 cans chopped tomatoes (Sara and Donald)
[*] bottle of red wine (Muz/Briwy)
[*] 3 cans beans (kidney or mixed), 1 large can sweetcorn (Sara and Donald)
[*] 1kg+ onions, 1kg carrots (Ian & Marianne)
[*] head of celery, garlic, fresh chillis (Ian & Marianne)
[*] bay leaves, tomato puree, smoked paprika (Mike?)

[*] 8 cooking apples (Briwy)
[*] 4 large bunches rhubarb (Ady)
[*] flour, oats/museli, sugar, butter (Tony?)
[*] 3 or 4 large cartons custard (Jillygumbo)

Tony - I'll probably bring 10-20kg of charcoal - I'm thinking of getting just one more dutch oven for my collection, in time to come down... ;) For the crumble, half a thingy each of butter and sugar, a splurge of flour and a dump of porridge oats should probably do it... I'm no crumble expert. ;)

Mike - fancy bringing the seasoning/taste?? I've added another row to the list. :D

As far as the weather goes... the charcoal I'm hoping to get (Weber Long Lasting) gets quite "grainy" as it burns - I'd like to keep the cooking setup away from tents and awnings, particularly if there's wind - don't want pinholes appearing anywhere. In terms of shelter for that, I will take care of ensuring the kitchen stays open in all but a storm.

We'll have a large table and chairs to seat eight and a 4x3 tarp w/ poles as a dining shelter, if needed. I'm sure we can work all that out nearer the time. Fingers crossed for good weather. :D

I've not used dutch ovens for that many dishes yet - stews, chilli, baked tatties, bread, muffins, curry, etc... but essentially, by varying how much charcoal goes on top vs underneath, you can bake, fry, grill, roast, etc... etc... If anyone would like to give their own recipe a go on Thursday/Friday, I'd be perfectly happy to give over a pot, some charcoal and lend a hand. Google "dutch oven recipes" for ideas - I may be making a "Mountain Man Omlette" for breakfast one day... :D
