overheating need some advice!!!!!

To start I would like to say sorry I know lots of people have put things up about over heating but please could anyone give me advise as this is what I have done and what happened.
The day I was leaving for holiday all packed and ready to go the van over heated 300 yards from my house (was left running when packing).
When I returned from holiday I drained the system and checked thermostat by putting in boiling water and it only opened by 1 or 2mm. So replaced thermostat with a new one, refilled system as described in a factsheet. Everything seem to be running fine went to the garden centre 20 miles away and back again then off to work which is 40 mile round trip no traffic and Bongo still going fine.
On the way back from work about a mile from home in traffic for about 15 to 10 mins the Bongo over heated so got home quick, just before I made it home the temp dropped so quickly lifted the bonnet and seats, I took the plug out of the bleed hose and lots of steam came out of around 5 to 8 seconds replace plug when just water run. Topped up water bottle and started van again. Left van running until fans came on and held the engine at 2,500 rpm for 3 mins temp still did not go up higher then it should so then went for a drive heavy on throttle between to roundabouts 300 yards apart did this 3 or 4 times when went home still left it running for 20 mins and all seems to be working.
Have I missed something could there still be a problem, please help as I rely on my Bongo a lot.
