Did the garage know how to deal with a bongo cooling system.....DID they bleed it using the bleed hose under the passenger seat.....if you don't know for sure I would ring and ask before driving it anywhere.

so this is want happen to her driving along we get a blip on the needle just ove the 11oclock then in gose to 1/2 between and coil light comes on note has not got in to the red.
we get a sound like there a air lock and loss of coolant

If you're losing coolant, it's going somewhere, it doesn't just disappear, hopefully your normal garage will find the cause.
The normal temp gauge is pretty much useless at telling you what's going on unless it's been modified with a Mason alarm -

If it's coming out of the overflow, that means either the pressure cap has failed, or it's got hot/pressurised enough to lift the 1.1bar cap to expel the coolant, needs some serious investigation, nort just topping up & sending on your way
