Here’s an idea for any leftover rice you may have from that jalfrezi you had last night – rice tortitas are a bit like tortilla española (see phase 5 for details) but even easier to do...

Rice, potato, eggs, spring onions, garlic, paprika & parsley

Grate a potato into a bowl....

....chop some spring onions & garlic....

....then stir-fry this little lot with the rice for a few minutes

Tip the rice & vegetable mixture into a bowl with the chopped parsley & eggs....

....and mix with paprika and plenty of salt & pepper....

....fry spoonfuls of the rice mixture, leaving room for spreading. Cook the tortitas for 1-2 minutes....

....on each side.

Serve hot

For added spice, do a large one....

....then get some chicken livers

....zap them in some oil....

....hmmm, I just know you’re going to like this one....

....and use the tortita as a base instead of fried bread
