I’m posting this early as most of you should be disappearing to the Bash. So, take your fishing rods with you as the site is by the side of the Severn, and do something quick, easy & filling with your catch. This is also particularly good if you’ve just been fishing in the Highlands, except that I don’t fish other than go to the wet fish counter at the local supermarket

Trout with almonds, an exceptional dish. I have to admit that I wasn’t anticipating these being as big as they were otherwise I would only have done the one :^o They’re also a lot cheaper than you might think – the brace in this little repast were less than £4.00 from Asda

Tip – Don’t use Mersey trout [-X

Trout, spuds, fennel and lemons :D

Image
Slice a lemon and some of the fennel. Bin the rest of the fennel

Image
Stuff the bodies with the lemon & fennel :-&

Image
This is messy in a Bongo – coat them in seasoned flour. Note to self – get smaller trout next time. Also, can you imagine the state of my camera now after trying to do action shots whilst covered from head to foot in flour?

Image
Fry in butter for a few minutes. Note to self – get a bigger frying pan

Image
Turn gently to avoid slopping molten butter all over your hob :(

Image
Remove the trout and zap some almonds in the residual juices....

Image
....and serve with lemon wedges & parsley. Note to self – get some bigger plates

Go on, you know you want to

Yep it's got a VW on the cover.. Called "The Campervan Cookbook.. Life on 4 wheels, Cooking on 2 rings by Martin Dorey and Recipes by Sarah Randell.

It's not only got recipes but some good ideas about campervans (vw's). You could do exactly the same but for Bongo's :) Your wealth and knowledge of your bongoing is all there... oh do it... :) I'll bring the book along for you.
