DIY conversion

I'm thinking of doing a partial conversion on our tintop bongo...wondering if anyone has any experience getting such a thing insured?
We'd have a pop top added professionally. But then I want to remove one of the sets of seats and put in something similar to a normal mid conversion, but without a hob or sink.
