Would this be any good for a coolant level alarm?

Take the lid off and stick it to the inside - run the wire back through the bulkhead.

?????
barking mad
how are you going to stick it to the inside of the tank which is pressurised and gets very hot?
what level are you going to stick it at?
the lead, what route does that follow? out through the cap?
why bodge a job that could easily lead to a terminal failure?
get a proper one, this is one occassion were you cant afford to go cheap.

You do realise that the the system is pressurised ? That you have to bring the leads out without any leaks ? The plastic parts will need to work at temperatures;

exceeding 90°C

Good luck you'll need it :!: :!:
